ADDITIONAL INFORMATION

Vinified in 2005, this is probably the first 100% sciaccarellu red wine (an emblematic variety of southern Corsica) for Haute-Corse, and the result is a very ‘personal’ wine. Selected indigenous yeasts and no sulphiting at the start of the harvest. Vinification in concrete vats. Three weeks‘ maceration, 6 to 10 months’ ageing. of maquis and spices... Enjoy with grilled fish or meat, tajine, sushi... by adjusting the serving temperature.

Although sciaccarellu is very sensitive to hot weather, our vines are deliberately not irrigated, out of respect for the terroir (the vine is a dry crop) and out of respect for an increasingly scarce resource for which the vine is not a priority: water. It is through our vine-growing methods that we help our vines to adapt to global warming.

This cuvée has been very successful in export markets where quality is a priority. Old vines with yields not exceeding 45HL/Ha.

Serve between 15 and 18°C.
