ADDITIONAL INFORMATION

A predominantly niellucciu wine, sometimes topped up with 5% minustellu (an old grape variety with a strong identity), from vines over thirty years old. No sulphiting at the start of the harvest (biocontrol).

Selected native yeasts. The grapes are vinified separately and then blended after 10 months of ageing. The wine is then matured in concrete vats for 5 months. Serve with game, beef stew, goat in sauce, veal tian with olives, charcuterie or strong cheeses.
